Recipe of the Month – Coconut Creamsicles!

It’s summertime!! And what better way to celebrate summer than with a yummy cold popsicle?

But the trouble is, those with food allergies and dietary restrictions often can’t participate in this summertime past-time. So what alternatives are there?

Thankfully, there are amazing people in the world who share recipes that are allergy friendly, and those options often end up being much healthier alternatives to what you can find in the store.

I ran across this recipe not long ago from the Coconut Momma that showed how to make coconut creamsicles. While the recipe is likely good how it’s written, I made a few tweaks due to the amount of popsicle molds we had and the amount of sweetness/natural sugar I wanted in these for my son. Here is how we made them our own:

Yield: Approximately 6 popsicles

Ingredients/Measurements:

  • 1 1/4 cups of organic orange juice
  • 1 tsp of vanilla
  • 1 TBSP of local honey
  • 1/2 can of coconut milk, divided
  • 1 scoop of collagen powder (optional)

Combine the orange juice, vanilla, honey, collagen powder and 1/2 cup of coconut milk (about 1/3 of the can) into a blender, and mix until well blended.

Pour this mixture into the popsicle molds until they are about 4/5ths full. Top off the molds with the remaining bit of coconut milk.

Put into the freezer, and allow to freeze for at least 4-6 hours (overnight is best). Once completely frozen, pull one out and enjoy!

What I love about these is that they are dye-free, only contain natural sugars, and offer a bit of hidden protein from the collagen powder and health benefits from the coconut. They truly do taste like creamsicles, and have been one of my son’s favorite desserts this summer.
